Super Delicious Guacamole

I’ve never really like guacamole. However, until recently, I had never really tasted it unless some of it inadvertently got on something else I was eating — and I didn’t like it. But since I have been trying new things lately, and Husby suggested we make guacamole a couple weeks ago, I figured I should give it a real try.

And what do you know? I actually liked it! We experimented with a few different ways of making it, and have come up with our favorite combination of ingredients.

THE RECIPE FOLLOWS:

6 large, ripe avocados (hard, not too squishy)
2 tomatoes
1 onion
1 clove of fresh garlic
2 nice sized jalapeños
fresh cilantro
1/4 cup lime juice

1. Peel and de-seed the avocados. Put them all in a large bowl and mash them thoroughly. We use a potato masher, but forks work well, too.
2. I use my nifty food processor for this next part, but if you don’t have one just make sure everything is chopped into small pieces. Slice and de-seed the tomatoes. Chop the jalapeños and garlic clove into smaller chunks. Cut a slice of onion about one cm wide. Chop it in half. Grab a handful of cilantro from the bunch and rinse it off. Toss all that into the food processor and pulse until everything is in small enough pieces (I watch to make sure the jalapeños and garlic are small enough).
3. Pour all that into the bowl with the avocado mush and mix thoroughly.
4. Pour in the lime juice and mix. We like a lot of lime juice in ours to make it nice and tangy. You may not want this much. It’s up to you.
5. At this point we usually taste it on a couple of chips and see if we need any more lime juice, or any salt, etc. and add it as necessary.
6. Chill for at least 30 minutes before devouring.

It’s important to note that we usually eat this with our favorite seasoned tortilla chips. I plan to create my own seasoning mix to add to the guacamole (among other things) in the future. Feel free to experiment with adding the following: salt, black pepper, paprika, cumin, garlic powder. Enjoy!
