Super Delicious Guacamole

I’ve never really like guacamole. However, until recently, I had never really tasted it unless some of it inadvertently got on something else I was eating — and I didn’t like it. But since I have been trying new things lately, and Husby suggested we make guacamole a couple weeks ago, I figured I should give it a real try.

And what do you know? I actually liked it! We experimented with a few different ways of making it, and have come up with our favorite combination of ingredients.

Chicken and Sausage Jambalaya

The first time I had jambalaya was at a wedding reception for my cousin. My mom’s whole side of the family is Cajun, so whenever there are get-togethers, you can be sure there will be plenty of Cajun food. Ever since that night, I’ve loved jambalaya.

Husby asked me to make it the other day, and I was disappointed to find that pretty much every pre-packaged jambalaya mix has gluten in it. Luckily, I remembered that a few weeks back, Leanne had shared several Cajun recipes with me, from a cookbook she found at her old home in Louisiana. One of these was jambalaya!

Okay, the only thing mermaid about them is the color. Next time I’ll do a better job of a themed cupcake, okay? :P

After looking at all the pretty cupcakes on flickr, I decided it was time to test the waters (heehee) and get myself back into the swing of making cupcakes. Let me just stress here that this was a test run and thus, I shouldn’t be judged too harshly on the prettiness of them. If only you could taste them! Because they’re quite scrumptious. :)

Holiday Spice Cookies

gluten free holiday spice cookies

I wanted to make some mini holiday cookies. Something tiny and cute and fun to decorate and easy to pack into a cute little gift box. My friend Leanne was kind enough to share her Autumn Spice Cookies recipe with me (which I changed to Holiday Spice because, well, it’s not Autumn anymore), and I had so much fun!

These cookies were a lot of fun to make, and decorate. And they taste so delicious! The icing also hardened perfectly for stacking, so I’ve made up a couple of cute little gift boxes of cookies to give away for the holidays. And making them also made my apartment spell so yummy for the rest of the day!
